Yummy Egg White Scramble

This morning for breakfast I made myself a egg white scramble with a side of grape tomatoes!  I started out making a egg white omelet but it ended up being a egg white scramble instead…. an egg white omelet is a skill I have yet to master (lol!!) it’s ok it was still yummy and delicious!!  In a attempt to have more protein in my diet, I keep eggs either whites or boiled in heavy rotation during the week. I would say I eat eggs at least 2-3 times per week.  My diet is pretty much the same, I really eat the same things over and over, so to avoid burn out I try to switch things up by adding fresh herbs, fruits and seasonal veggies for new variations on my norm.  Instead of butter or oil to cook my eggs I use either coconut oil, or red palm oil it gives my food extra flavor and a dose of good healthy fats. Melt oil on medium to high heat and sauté your veggies go crazy and eat as many veggies as you the things you love.  Then I pour in about a 1/2 cup to a cup of egg whites over the cooked veggies and season with salt and pepper, once the egg whites are cooked fold eggs into cooked veggies already in the pan.  Place eggs on a plate and sprinkle with fresh herbs like parsley or cilantro add a side of sliced tomatoes or cucumbers and enjoy!!  Luv what you eat fearlessly!!
