Fresh Blueberry oatmeal crunch!

blueberry oatmeal crunchI hope you all had a wonderful day and a Happy Easter!  If you are anything like me you did a little dip’n in the kids Easter basket (chocolates, sour jelly beans… OK please tell me I’m not the only one!!!) and of course the magnificent Easter Meal with cheesy potatoes (good gracious).  So glad to  enjoy the day but now it’s time for me to get back on track, I’m starting the week out in a great way by  getting in some good nutrition!  For breakfast I’m starting out quick but hearty cup oatmeal packed with good complex carbs, protein, and anti-oxidants! Here is what you will need:

Coconut Dream

1 cup of quick oats

1 cup of Coconut Dream (original available at sprouts or walmart)

1 TBS of Maple Syrup or coconut sugar for sweetness (Trader Joes)

1/4 cup of Spanish peanuts

1/4 cup of fresh blueberries

 

add just a few raisins (because they taste so good in oatmeal totally optional and pepitas (raw pumpkin seeds) for a nice extra crunch

a dash of cinnamon, nutmeg and salt to taste

Combine oatmeal and Coconut drink  in a small saucepan on the stove top cook on medium heat for about 1 minute, remove from heat and add in Maple sugar or coconut sugar, peanuts, raisins and all other ingredients except for the blueberries. Stir well and remove from stove and place oatmeal in a bowl top with fresh blueberries!  Enjoy!!
