Spicy Cabbage with garlic over Jasmine rice!

spicy red=pepper cabbage1Spicy Cabbage with tons of fresh garlic and red pepper over Sticky Jasmine rice.  On Sunday’s I like to cook a Sunday dinner for my family.   For me I like to eat a meal a little different from my normal everyday meals during the week.  I made Jasmine rice for my family and decided to use a leftover cabbage head from St. Patrick’s day for myself.  I cooked my cabbage on high heat with coconut oil, fresh garlic and red pepper.  It only takes a few minutes to cook, cabbage is not that good if you over cook it to death..I like mine with a little bit of crunch and texture!  Season your cabbage with salt and pepper or soy sauce to taste, add some red pepper flakes for the heat!!!   It’s such a simple satisfying dish that taste really good and it’s easy on the clock!

1 small cabbage sliced thinly as if you were making a slaw.

1 red pepper (Chunky Cuts)

3 cloves of diced garlic

1 TBS of coconut oil

Red pepper flakes to taste (The Spicier the better)

1 cup of cooked Sticky Jasmine rice (add a little more water or broth to make it sticky) If you are using a rice cooker 1 cup of Jasmine rice 1 1/2 cups of water and 1/4 cup of coconut milk salt.  The rice cooker will do all of the work!

Season cabbage with salt and pepper or soy sauce.
