I have been giving the gluten-free lifestyle a try, and so far I’m loving it! Not because I have Celiac disease or any gluten intolerance, I like many of you am concerned about the genetically modified foods we eat especially wheat. I try to be open-minded and educate myself as much as possible, determined to figure out things as I go. So for a busy mom like me who pretty much lives in her car, I don’t want to sacrifice my day with an unhealthy food choice that gets me stuck in a bad cycle. I’m always looking for good fuel to keep me going, because this mama’s got a lot to do, and I need the extra energy to keep this train moving! My goal is to look for things loaded with whole grains (gluten-free), protein and of course fruits and veggies. On the days I don’t have time to whip up an egg white scramble, or prepare a green smoothie I want to grab something quick, that taste good, nutritious, and is easy to eat in the car! Here are a few of my packed with protein gluten-free faves that I’m just so loving right now!
Ditching the gluten doesn’t mean you have to give up oatmeal or an occasional cookie or bagel! My favorite certified gluten-free oatmeal on the go is Straw Propeller Blueberry Blitz natural gourmet oatmeal. This oatmeal is special, it’s loaded with yogurt covered blueberries along with even more blueberries…so good.
I love Fall, and all the wonderful comfort foods that it brings! As far as the fruit for Fall hands down apples win! I love apples, my favorite are theArkansas Blackthey areso crunchy, sweet with a little bit of tart and super crisp! On your next trip to the apple farm with your family be sure to give them a try trust me you are going to love them! I also love squash, and root veggies during this time of the year too. I don’t know what’s happening in the soil right now, but leafy greens are tasting on point and extremely good! For the past week or so I have enjoyed some really delicious collard greens simply prepared, pan simmered with garlic, rice wine vinegar,spicy sesame oil, salt, pepper and a couple of teaspoons of coconut sugar to balance it all out!!! My kids are liking them too, over the weekend I got a little creative and put collard greens on top of chow-mein. Yes it was a little crazy combo but the taste was a whole lot of good!! I’m also putting leafy greens in smoothies and soups like (collards, kale) or eating them raw in spinach salads. It’s also a nice change from the typical mixed greens that can get a little boring, plus these leafy greens are rich in nutrients. This Fall I plan on making a hearty, delicious root vegetable and leafy green stew, I found this recipe on Pinterest (I love Pinterest) and you best believe I’m trying this one soon!! Getting a good dose of something healthy is what the doctor ordered especially as we head towards the comfort food zone Season of Fall, andeating way too many sweet treats to feel good about ! I’m trying to enjoy it all without the guilt, carefully navigating my way through the season without packing on the extra lbs! To be quite honest I have been consuming a WHOLE Lotta sugar lately. School is back in full swing mode, and it seems like every weekend it’s a birthday party or gathering. While it’s been a lot of fun, and totally awesome I gotta pump the breaks and find the balance. To me It’s totally doable, and part of the journey, living and loving the life you desire without FEAR while enjoying every bite!

I love yummy delicious food! I had some extra ripe bananas sitting on my counter in desperate need of being used before they went totally bad. I was craving something cake-y and sweet, so I decided to make a Buttermilk Banana Bread using buttermilk waffle mix, oats, milk chocolate chips and fresh buttermilk. It turned out so good that I had to share this crazy recipe! This was totally on the fly, I made this up by pulling ingredients out of my pantry whatever I had on hand. I hope you give it a try and like it too!
Buttermilk Banana Bread with Chocolate Chips & Peanut butter (sorry for the long name)!! Pre-heat oven to 350 degrees
1 cup Krusteaz (Buttermilk pancake mix)
1/2 cup all-purpose flour
1/2 cup oats
1 tsp baking soda
1/2 cup Guittard Milk Chocolate (baking chips)
3 ripe bananas
3 tbsp egg whites
1 tbsp Mexican Vanilla
1 tbsp natural peanut butter
5 tbsp buttermilk
1/4 cup red palm/coconut sugar (found at Trader Joe’s)
This recipe was not politically correct at all according to “baking standards” (so please excuse me) This recipe was nothing fancy…I used 1 bowl! I combined all the wet ingredients and beat together with a had mixer, then I added the dry..that’s it. Before I put the batter in the loaf pan I placed 1 tbsp of red palm/coconut shortening in the loaf pan placed it in the oven to melt and heat the oil, I pulled hot loaf pan out of the oven and poured the batter I cooked the bread for about 20-25 minutes until golden brown. Enjoy!!

Caramel Corn Puffs are delicious, I like them better than regular Carmel corn and I hear they’re super easy to make! I’m excited to get into my pantry and come up with a healthier version…I’ll let you know how it turns out! My inspiration is the Chicago style popcorn like Garrett I love the combination of cheese popcorn with caramel..the whole salty sweet thing is over the top amazing!!!! The baked version without the Hull’s sounds sooo GOOD!! I found this recipe on PinterestJulieseatsandtreats.com I’m so excited to give it a try…I’ll let you know how the healthy part of my experiment goes!!!
I love pizza night! Nothing beats a mouth-watering dripping with cheese pizza loaded with garden fresh veggies! My favorite on pizza is mushrooms, onions and garlic with red pepper flakes! This is my simple take on a french bread pizza. I used sourdough bread slices like ( San Luis) since I love it so much!! I added pizza sauce, with fresh mozzarella and a little bit of aged extra sharp cheddar…so super easy but oh so yummy! To go with my pizza I had a glass of Roscato my favorite slightly sparkling red wine to wash it all down! For some extra greens I had a side salad with tomatoes and avocado. And for dessert… hey on pizza night you gotta have dessert, I had Talenti Gelato Chocolate Peanut Butter Cup topped with some of my homemade coconut granola talk about a good cheat meal! Eat this and Live!!
I just came back from a much-needed week of vacation with my family in Oahu, Hawaii. All I can say is wow It was absolutely breathtakingly beautiful! It felt so good to be free, with my toes in the warm sand, swimming in the Ocean alongside the sea turtles and beautiful schools of exotic fish…truly amazing!! I wish I could say the same about the food…I wanted to have some authentic Hawaiian food to die for but that was far from what we got :( Hopefully on my next trip I will get the opportunity to do so. One thing that I did have that was an actual taste of Hawaii (other than the Mai-Tai’s on the beach lol yum) was something that the locals call a Pineapple Whip from the Dole Pineapple plantation…OMGravy my mouth is watering just thinking about it!! The Pineapple Whip is a local favorite that draws thousands of visitors daily, it was so succulent, sweet and juicy with a hint of tartness to make your taste buds go crazy!! This tasty little treat was a juicy bit of sunshine, and the Dole Pineapple factory has this thing on lock hands down!! You can purchase the Pineapple Whip at other locations on the island but the best whip can be found only at Dole…so do not be fooled by the imitators it’s so worth the long drive in the jungle. All I have to say is if you are planning on visiting Hawaii be sure to try the Pineapple Whip at the Dole Pineapple plantation, Life is sweet Eat this and enjoy!!
Ok I love summer especially summer foods like picnic’s, barbeques, popsicles and my downfall ICE Cream!! I try to be a good girl most of the time..(he he) if I have a craving for ice cream most of the time (not always) I go for the greek frozen yogurt. I mean hey it’s summer I want to keep cool with a creamy delicious treat too! Another alternative to greek or frozen yogurt (which has a lot of sugar) is a good old fashion what I like to call red, white and blue. Should you have a treat?? Yes.. it’s ok.. really I promise, but be sure to switch things up and go for the fresh healthy stuff too like a fresh fruit parfait made with fresh pineapple, blueberries, raspberries and Fage greek yogurt. For a yummy crunch add some homemade granola lightly sweetened with organic maple syrup, brown sugar or coconut/red palm sugar. To make your own granola is so super easy and it’s much better for you instead of buying the store-bought stuff which can be filled with junk you don’t want and way too much sugar!!! It’s such a great treat so fresh and so yummy without all of the guilt!
